Aged for a minimum of six years in the traditional Criaderas and Soleras system, the wine undergoes both biological and oxidative ageingfirst developing under flor yeast before gentle exposure to oxygen adds depth and complexity. A small addition of Pedro Ximnez provides subtle sweetness and
