It is a blend of 73% Cabernet Sauvignon 27% Merlot

and 14% Carignan from Purapel • All 150+ year-old bush vines on granitic soils in the Coastal Range mountains • Lightly (champagne cycle) whole-bunch pressed • Native fermentation • Lees contact for nine weeks with weekly battonage • Aged in stainless steel

The agave is slow cooked in traditional brick ovens for 72 hours and then distilled using a proprietary yeast developed by our master distiller
